Disable truth processing in NSW Simulation

Francesco Giuseppe Gravili requested to merge fgravili/athena:MMtruth into main

As requested in ATR-25528, a switch was added to disable truth processing for normal MC production. An additional clean up was done to remove redundant and not used truth branches
