Updating SimCoreTests ART jobs (ATLASSIM-5526)

Updating some SimCoreTests ART jobs to use Run3 geometries rather than obsolete Run2 geometries (ATLASSIM-5526). (In some cases the ART jobs have been renamed to include RUN3 in the job name.)

There are still more scripts to be updated, but it is better to avoid updating all jobs at once, so that output changes caused by other MRs can still be spotted.

NB This MR only updates ART scripts, so should have no effect on the CI output.
