Projects: update project versions to release 25

With the release branching completed, update the projects version in main as follows:

  • Athena, AthSimulation, DetCommon, VP1Light: 25.0.0
  • AnalysisBase, AthAnalysis: 25.2.0
  • AthGeneration: 25.6.0

P.S.: Doing this exceptionally as MR do be able to tag the relevant experts: @krumnack @jcatmore @nstyles @jchapman @ewelina @akraszna
