ZDC Monte Carlo Specific Reconstruction Configuration

This MR adds a Monte Carlo specific configuration to the ZDC Reconstruction ("MonteCarloPbPb2023"). Previously there was no specific configuration for the Reco of the new ZDC Monte Carlo, which means that several data specific corrections were modifying the ZDC energy response seen in Monte Carlo.
