Remove VR track jet b-tagging

Dan Guest requested to merge dguest/athena:rmvr into 24.0

Followup from !74574 (merged), which removed VR track jet b-tagging from derivations by removing them from the slimming list. This prevents us from running the b-tagging in the first place.

I'm also taking the chance to clean up workarounds for the naming inconsistency between the b-tagging object and the jet object here.
