Fix expert mode for METMaker

This MR fixes the "expert mode" for the METMaker by adding a property with a meaningful default value. I'm also removing one property which isn't in use anymore since the clean-up from !75823 (merged).

This addresses ATLJETMET-1895, which was flagged by @wbalunas and @fballi.
