Updates to PFlow e/p config

This MR contains a few updates to the pflow e/p config. This should not affect production workflows.

The helper function to configure many things uses is split such that client configurations can choose to only configure the metadata part.

Thinning is disabled explicitly via a new flag, which is turned to off when using e/p mode in the example config
