TauSelectionTool: switch to use v0prune model for Tau ID selection

Given the validations tests recently collected in https://indico.cern.ch/event/1487295/contributions/6269455/attachments/2982721/5252272/Slides_PC_20241209.pdf, we would like to switch TauSelectionTool to use v0prune as default version to cut/use GNTau
