FPGATrackSim: Recode a bit the F-100 configuration downstream

This changes a bit the configuration for the F-100 pipeline for two main reasons:

1. To keep up in a more inclusive way with whatever changes take place in C-100
2. To make the configuration function more flexible and re-usable in the actual F-100 (--> maintainability and consistency)
