GeoModel version bumped to 5.3.0

Vakhtang Tsulaia requested to merge tsulaia/atlasexternals:main-geomodel into main

Athena has already been switched to GeoModel 5.3.0 using override variables in build scripts. This MR catches up with the latest GeoModel version. Once this change makes it into Athena main, the overriders in the build scripts can be cleaned up.
