two bugfixes (TUnfold & quick)

• quick has been updated to compile the code in a build directory of any name (i.e. not only build)
• the installation of TUnfold has become problematic (see #32), a temporary solution is proposed where RooUnfold is simply no longer installed in the micromamba environment but using the custom TUnfold finder
