Use Readthedocs

The way I implemented it (i.e. with the conda environment specific to build the docs) is probably suboptimal. The best way would be to have the requisites to build the docs described in setup.cfg, but this issue makes nbsphinx not being found when the packages related to sphinx are installed via pip instead of conda.
