Dockerfile Update/Fix, master branch (2025.01.31.)

Following up from !42 (merged), made the Docker build compatible with the CMake updates.

Since the examples and tests are not "installed" with the project anyway, I just don't even build them as part of the image. 🤔 Plus the installation now goes into /usr/local in the image, the /home/crestapi directory stays empty.
