[CI] Set logFormat for the gRPC Frontend to "json" instead of "default" to allow parsing by fluentd

Description

This commit changes the preconfigured log format of the gRPC frontend to json instead of default. This change will allow fluentd to parse the logs of the gRPC Frontend.
