TnP 2025 J/psi EMC – configs and code updates

This MR contains the modifications I used for the J/psi EMC Tag and Probe 2025 studies.

Changes include:

• Updated configs and registry files
• Adjustments to dataset and muon definitions
• Helper functions improvements
• Updated prepare/run_single_fit scripts
• Workflow configuration for Muon_TnP

This branch can be used to reproduce the scale factors I presented.
