Draft: Remove old flags from Gaudi

The old build flags clutter ATLAS and Gaudi source code - makes sense to remove these.

This is a repeat of !596 (closed) - I had to rebuild my fork since it was too old and had no CI.

I initially assumed G21_HIDE_SYMBOLS could be enabled by default but this leads to big compilation problems, at least under GCC.
