Push to the latest docker image tag when using kaniko

To be consistent with the pre-kaniko example. This is probably closer to what the default behavior should be.

Taking the opportunity to propose some changes in comments, feedback welcome - maybe there's too much but the upstream doc is not very clear on how to adjust kaniko parameters.
