set node-exporter image in prometheus config to use registry.cern.ch

We're overriding several prometheus images but not the node-exporter, which is still being pulled from the default location: quay.io/prometheus/node-exporter:*

Related to cci-container-infra#5 (closed) as it needs the replication to happen properly first before this can be done.
