Bump up version of LHCb and related projects for Gauss sim10 and G4 dev
This is done in all 'sim10' related slots, moving configuration that was in lhcb-gauss-dev to all sim10 related slots, since MCQ report shows we can do it. It requires lhcb/Gauss!841 (merged).
Do the same for lhcb-g4-dev that will also fix the compilation problem due to missing !839 (merged) when compiling against LHCb v53r7.
