Add 'x86_64_v3-centos7-gcc11+dd4hep-opt+g' to the platforms to build in lhcb-dd4hep

Add this platform to the lhcb-dd4hep test slot, as I recently came across an issue in the RICH dd4hep support only made apparent in the v3 (AVX2) enabled builds.
