ParKF: 2025 update of Parameters

Updating the ParKF parameters following the release of v8r1 field maps. (#592)

Depends on lhcb-datapkg/ParamFiles!149 (merged)

Also includes:

• shared parameters between up and down polarities.
• Fix of the issue described in #590 (closed)
