Try to make it clearer at the top of installation.md page when to use the full stack

Documentation update only

After some feedback from the U2PG, I wanted to try to make it clearer to users when the whole stack would be the right thing to use at the top of the page. Hopefully this will avoid them trying the nightlies etc first if it is not so applicable.
