These are some changes towards providing some dummy producers of event model types, for use in tests and benchmarks of isolated components.

Add logic in TrackEvent for faking a LHCb::Pr::Fitted::Forward::Tracks container
Reorganise so the relevant packages/tests can access this
Tweak some "proxy" types as needed for changes in Rec!1785 (merged).
