LHCbMath: Enable VDT and math speed test applications on ARM

Various test applications in LHCbMath where previous built with x86_64 specific optimisations (AVX, SSE etc.) and where just disabled on ARM. This MR just enables them there with the default ARM optimisations used in the stack.
