[charm/hyperons] use OWNPV functors for basic particles

Cherry-picked from !2886 (closed).

No new lines added or selection values changed. The warning from the original MR applies:

MINIPCHI2(pvs) goes to OWNPVIPCHI2, this is technically a different observable (OWNPV based on IP not IPCHI2)

So the retention / BW might change a tiny bit, but the quantity makes more sense if it's defined like this, especially for long lived particles.

Hi @mstahl, I noticed there is still a lot of discussion on !2886 (closed). So, if you want to have already those changes in the hyperons module we can proceed by merging this. Are you done with the modifications?
