[charm/hyperons] use OWNPV functors for basic particles

Cherry-picked from !2886 (closed).

No new lines added or selection values changed. The warning from the original MR applies:

MINIPCHI2(pvs) goes to OWNPVIPCHI2, this is technically a different observable (OWNPV based on IP not IPCHI2)

So the retention / BW might change a tiny bit, but the quantity makes more sense if it's defined like this, especially for long lived particles.
