Minor config script update for simulated data in Panoptes in Jan24-2025

Minor update to be in sync with recent updates in Moore config files in January 2025.. This is to run the reconstruction with simulated data. An updated example options file to run this and the log file obtained are attached for reference.Rich_test_std_Jan2025.py.txt
