Update monitoring algorithms for 2024 data taking

Updates in VPHitEfficiencyMonitor to be able to remove requirement on hits on both sides in the first and final station of the VELO. VPTrackMonitor now includes the 2D asymmetry and make theta absolute for backward tracks.
