Adapt tests for Alma, RHEL10

Only real change is we use LABEL rather than UUID in grub options for the root and other filesystems.

As for the UUID vs LABEL in /etc/default/grub my simple EL9 machines are using UUID. In reality we were not testing at all on 9.

Second commit removes some deprecated egrep calls.
