[NOTICKET] Change production image tag name from latest to stable

Guillermo Facundo Colunga requested to merge fix-stable-tag-name into master

We are using the tag stable to make reference to the production image from all our spark jobs repos. I think when Kaniko was introduced this was set to latest; changing it now to stable.
