More binning adjustments

I've tried to make the finer bins showing larger fluctuatios a bit wider, at the expense of pushing up the upper edge of the distribution.

I have reduced the deltaPhi observable from 7 to 6 bins. I've hesitated to do the same for the |eta| distributions, but overall they look OK.
