Unset CORAL_XXX_PATH variables when running in CI

We now define these variables to point to local files in the gitlab CI job, but the files that are injected don't work. This makes sure that the variables are undefined at the time the tests are run, as it was before the CI change.

@mark as I explained in the e-mail this should fix the two tests failing now.
