Fix setup of MET configuration for PhysVal

This MR should fix a problem in the configuration of METMaker for Physics Validation that appeared in the latest ART tests (see ATLASRECTS-7378).

I also found a small bug in METMaker that I briefly introduced in !57861 (merged) and fixed it (shouldn't have an impact on the MET calculation used in analysis so nothing dramatic).
