L1CALO CA derivation, fix config for jFEX, gFEX TOBs. Call re-simulation for all FEXes (ATLASRECTS-7473)

Fix typos for the jFEX, gFEX TOB function (was only writing Offline_Copy). With this fix to the jFEX simulation config !61102 (merged) the re-simulation for all FEXes is now done and the "Sim" TOBs written to the DAOD.
