Aadapt doc to benchmark scripts migration to PRConfig

see lhcb-datapkg/PRConfig!130 (merged)

note that I linked to the actual readme.md file in the benchmark-scripts subfolder.(Link won't work until PRConfig MR is merged)
I hope that's ok? I figured it's better than having to be left in PRConfig root trying to search for the relevant files.
